Imeruli (Imeretian) Khachapuri Recipe

I have written extensively about the inseparable connection between Georgia and khachapuri, and I promise to continue sharing more recipes with you. Today, I would like to introduce you to the recipe for one of the most famous varieties: Imeretian khachapuri. 

Before diving into the recipe, let me briefly explain the significance of khachapuri.

I have my favorite recipe for making khachapuri dough, which a wonderful Georgian housewife taught me long ago. 

Today, I offer you a slightly unusual and amazing recipe that I learned from one of the best Georgian chefs.

Preparation of Imeretian Khachapuri – Ingredients

  • Flour – 1 kg
  • Homemade yeast
  • Butter – 400 g
  • Cheese – 450 g (traditionally Imeretian, but mozzarella or feta can work too)

Let’s start with preparing homemade yeast

  • Water – 500 ml
  • Yeast – 15 g
  • Sugar – 10 g
  • Salt – 30 g
  • Flour – 10 g

Use lukewarm water and add yeast, sugar, and salt. Mix the ingredients thoroughly several times to activate the mixture. 

Finally, add some flour and let the mixture rise.

How to make khachapuri dough

Sift the flour into a bowl, then add the butter and mix thoroughly. Next, add the yeast and knead the dough for about 5 minutes.

Wrap the bowl containing the dough in cling film, place it in a warm location, and allow the dough to rise.

Start by placing the dough on a clean surface and kneading it thoroughly. 

Next, divide the dough into several pieces, each weighing about 250 grams. 

Take one of the pieces and roll it out. Then, add approximately 450 grams of grated cheese and wrap the dough around it. 

Place it on a baking dish and bake it in the oven at 250 degrees Celsius (482 Fahrenheit) for about 15 minutes.

Once baked, you’ll have a golden, crispy, and fluffy khachapuri, oozing with melted cheese. Pair it with a glass of Georgian wine for the ultimate experience!
